In Venezuela, everything seems to have a different name to the rest of Latin America, to the famous pancakes, we call it ”panquecas”. Many people laugh at that word when I use it, but the truth is that I think at least I’m not interspersing English with Spanish. Although if I think about it, and we made an exact translation it would be “pan cakes” and that would sound ugly.

The thing is that the famous pancakes were not to my taste when I was a child, since I’ve never been a fan of sweet, and the truth is that they did not appear at all in my breakfasts. My cousins instead were mad with pancake towers full of honey and butter.

It was until many years ago that I discovered the delight of eating pancakes. My favorites are still traditional, but recently my friend Penelope mentioned that she made them with banana and oatmeal, and that encouraged me to prepare them differently. This version is very delicious for those of us who are fanatics of banana and also that the recipe is without butter, without flour and without sugar. I fill them with red fruits and slices of banana, honey jets or agave syrup and I enjoy this breakfast a lot! I hope you are encouraged to try this version!

The recipe for banana and oatmeal pancakes

For 6 units (or 2 people)

Ingredients:

2 large bananas (preferably very ripe)

2 eggs

1 tsp (teaspoon) of baking powder

½ cup oat flakes

Optional: 1 tbsp (spoonful) of sugar (I do not do it)

To accompany: honey or agave syrup, red fruits or bananas on wheels.

What I do?

1 In a blender I add all the ingredients and blend for 45 seconds to 1 minute.

2 I let the dough rest for 10-20 minutes.

3 I take a pan, I shine it with a little vegetable oil. I take a measure of soup spoonful of the dough and cook the pancake over medium heat. Once bubbles begin to appear with the help of a palette, I turn over.

4 I put the pancakes in a dish by covering them with a cloth or I put them in the oven with very low temperature.

5 I serve a tower and insert with fruit in the middle.

6 I let a lot of honey or agave syrup drip.
